As creator of The Jekyll & Hyde in Birmingham, the first modern dedicated gin palace in 2009 he's been at the forefront of the modern gin renaissance.

From Brand Ambassador work for the Worlds most awarded gin Martin Millers to intimate house parties, regular collaborations with multi award winning venues and guest speaking at large corporate networking events aross the UK. 

20 years experience of the drinks industry allows him. . to provide a passionate and personable hosting style to leave a lasting impression.

Accompanying Carl will be Daren creating, demonstrating and offering a selection of Tapas to marry up with The Chosen Gins.

This is a unique evening building your knowledge of both cooking of Tapas and the story of Gin.

Introduction to the course

During this four-hour course you will learn to chop, slice and dice like a professional in this essential knife skills workshop.  We believe that being a good cook involves many skills but for us learning how to use a knife properly is essential. Great knife skills reduce preparation time and waste in the kitchen and produce more attractive dishes with improved texture and style.

 

This four-hour class begins with a welcome drink and a light bite to allow you time to discuss the experience you are about to have with the Chef and to meet your fellow students. For the next few hours you will learn the skills involved to create the dishes on our menu. To finish we will all gather around our chef’s table to enjoy a delicious recipe that you have prepared and enjoyed with a glass of wine or a soft drink.

Introduction to the Course

This six-hour course is designed for those who want to improve their pastry and dessert making skills in both the preparation and presentation of the final dish.

Our chef will introduce you to the tips, tricks and skills used by patisserie chefs from around the world to enable you to craft delicious desserts to impress your family and guests - from melt in the mouth soufflés to crumbly sweet shortcrust pastry tarts alongside classic  British desserts. By the end of the course you will be able to present your desserts with panache and style having learnt the secrets of professional plate dressing and the use of garnishes to enhance any delicious dessert.  

At the end of the course you will be seated at the chef’s table with your fellow students to enjoy delicious food that you have prepared using the skills learnt on the course and accompanied by a glass of wine or a soft drink.

Demo and Dine - Italian Cookery

Italian food has some of the tastiest, freshest ingredients and flavours around which is probably why it has established a place in our daily diet. 

Come join us for one of our Demo & Dine cooking class series, where you join us for an intimate evening of culinary education, delicious food and beautiful wine. No aprons will be dirtied or needed in this two hour demonstration followed by a three course tasting menu which will be prepared right in front of you as you sit back, relax and learn through watching, listening and tasting. 

We take you through each course step-by-step, Daren will share his tips, tricks and tools of the trade.

Tonights menu will be full of exceptionally flavourful Italian dishes.
Mussel, tomato and chilli tagliatelle
Pizza bianco - pancetta, rosemary and potato
Rise e bisi - risotto with peas and herbs
Classic ragu of beef shin with vegetables
Foccacio Bread.
Chestnut, chocolate, and coffee tiramisu.

The evening starts at 5.45pm - finishes around 10pm.

Package includes arrival drinks, two glasses of wine or bottles of beer and three course dinner. £55 per person.
