The food this evening will be delicious and never a weak substitute for those that do not eat meat. With more and more people seeing the benefit of being Vegan and Vegetarian.

We will start the evening off with a citrus and ginger power shot before watching Daren demonstrate an array of delicious dishes finishing off with everyone sitting around the Chefs table to enjoy the foods demonstrated.

You will leave us with a variety of skills necessary to understand how to cook delicious Vegetarian and Vegan food.

Expert teaching and advice, using standard home kitchen equipment the class is informal so Daren welcomes lots of questions and interaction.

Leave with the knowledge and understanding to make the delicious recipes at home

We are running a fifth 'Forage and Feast' Wild Food and Professional Cookery event at The Cook School, Bewdley on Thursday 11th April 5.30pm.

Owen Raybould will trek and talk you around Greensleeves field which is will be bursting with so many edible leaves and goodies to eat telling you all about them. Then on your return you will enjoy a demonstration from Daren with Owen's assistance showing you ways of turning your forage into delicious tasty food. Try Comfrey Fritters with Mustard Leaf Dipping Sauce followed by 2 more delicious courses.

Cost will be £40 per head this includes a one and a half hour tour of the field with expert knowledge from Owen, Cookery Demonstration and to finish a 2 course dinner with a glass of homemade cider.

Italian food has some of the tastiest, freshest ingredients and flavours around which is probably why it has established a place in our daily diet.

Come join us for one of our Demo & Dine cooking class series, where you join us for an intimate evening of culinary education, delicious food and beautiful wine. No aprons will be dirtied or needed in this two hour demonstration followed by a three course tasting menu which will be prepared right in front of you as you sit back, relax and learn through watching, listening and tasting.

We take you through each course step-by-step, Daren will share his tips, tricks and tools of the trade.

Tonight’s menu will be full of exceptionally flavourful Italian dishes. Mussel, tomato and chilli tagliatelle pizza bianco - pancetta, rosemary and potato, rise e bisi - risotto with peas and herbs, classic ragu of beef shin with vegetables , foccacio bread, chestnut, chocolate, and coffee tiramisu. The evening starts at 5.45pm - finishes around 10pm.

Package includes Arrival drink, two glasses of wine or bottles of beer and three course dinner.

This one-day bread course offers you the opportunity to improve your bread making skills and learn techniques to make the very best bakes. Whether you have tried bread making at home and the results have disappointed, or you are yet to have the confidence to bake your own bread, this course has something for you. We will show you some classic techniques aimed at adding sophistication to your bread making skills and a selection of bakes with which to impress your friends and family.

You can develop your artisan bread making skills and learn how to create exciting bread for day to day living. Whether you are a beginner looking to build confidence and skills or an old hand with bread we can challenge your skills and help you improve. You will knead, pummel and stretch your way to the perfect loaf. We will introduce you to a range of flours and you will learn about using fresh and dried yeast to make a variety of doughs for different types of bread. Once you have learned these basic doughs you can experiment at home with different shapes and adding extra flavours to them.

The classes take place in our stunning kitchen with breathtaking views of The Wyre Forest. We always encourage a hands on approach within the classes and all ingredients and equipment will be provided.

Come to The Cook School Bewdley to discover the secrets of cooking with fire and smoke. These most ancient of artisan cooking techniques will be shared with you as you discover how to cook a range of delicious dishes over charcoal.


During this course all BBQ myths will be dispelled as we share with you all easy methods to ensure you never burn another banger! You will learn how to prepare a selection of meat, fish and vegetable recipes and watch them being cooked to perfection on our monolith grill. You’ll find out how to get the best out of your BBQ and any previous charred offerings will become a distant memory. In addition, you will learn how to create delicious marinades and scented dry rubs designed to complement your choice of meat or fish.

By the time you finish the course you will be filled with the confidence and inspiration to be able to replicate the dishes at home as well as being equipped with a clear understanding of how best to prepare and cook different cuts of meat. As the evening comes to a close we will send you home knowing that friends and family will receive your newly honed outdoor cooking skills with applause when you entertain with flair and flame at home.

Finally, you will enjoy all the dishes prepared and cooked for you for your dinner knowing that they have been carefully paired with a selection of Craft Beers and Wines. If the weather is kind you will be able to sit on the balcony or in the beautiful Kitchen garden overlooking the Wyre Forest and talk to Daren and your fellow students about what you have learnt until the sun goes down.

Using Robert Welch knives we will teach you the techniques favoured by professional chefs so that you can understand how to use your knives to their best advantage as the dishes you will be preparing require different knife techniques throughout. Also, you will be shown the correct technique to keep your knives razor sharp reducing waste in your kitchen and improving the presentation of your dishes.

The list below illustrates the different types of meat or fish, cooking methods and guidance that you will see being demonstrated by our chef. There will also be an opportunity for you to practice some of these skills as part of your interactive experience at the Cook School Bewdley.
